LWC - The Oscars The Party

Oscar Night is approaching and if you are thinking of throwing an Oscar Night Party I've come across some wonderful and delicious recipes for you..
A party is no party if there isn't champagne and since Oscar Night is all about extravagance why not toast to this event with some dry or sweet champagne.


Cocktail

1/2 oz Pomegranate Juice
1/3 oz Orange Liquor
Add Fresh Raspberries
Top with Moët & Chandon Imperial






Appetizer



Shrimp Oscar source:post-gazette.com

1 pound cooked shrimp, peeled and cleaned
1 6-ounce can crab meat, drained
1 package frozen or 10 fresh as- paragus spears - canned aspara- gus may be substituted
1 package hollandaise sauce mix
1 cup milk
1/4 cup butter or margarine

Parboil asparagus for 2 to 3 minutes until crisp tender. Meanwhile, prepare hollandaise sauce mix with milk (we used 2 percent) and butter according to package directions. Drain asparagus on paper towels and cut into 1-inch pieces. Mix together with shrimp, crab and hollandaise sauce.

Place in a microwavable casserole dish. Cover and microwave for 5 minutes. Remove and stir. Makes 2 generous or 4 regular-size portions.


Appetizer

1 (10-ounce) box of breadsticks, crostini, or crackers
1 cup niçoise or kalamata olives
1/2 cup cornichons (or sweet or dill pickles)
1 (6-ounce) jar marinated artichoke hearts, drained
1 (12-ounce) jar pickled vegetables
1/2 cup dried tomatoes marinated in olive oil (or 1 pint grape or cherry tomatoes)
1 pear or apple, sliced
1/2 cup dried apricots, figs, or dates
1 cup Marcona almonds (or other almonds, cashews, hazelnuts, pine nuts, or peanuts)
1/2 cup extra-virgin olive oil
Sea salt, to taste
Freshly ground pepper, to taste
Fresh rosemary sprigs
1/2 cup Dijon mustard
Dress it up: wedges of cheese, such as sharp Cheddar, Parmigiano-Reggiano, Manchego, Asiago; meats and fish, such as Genoa salami, soppressata, prosciutto, capicola, smoked salmon, steamed shrimp
Preparation
Arrange first 9 ingredients on a large platter or cutting board. Pour olive oil into a small bowl, and add sea salt, pepper, and rosemary. Place mustard in a separate small bowl. Set out small plates for guests to help themselves and several small bowls to collect olive pits

Main Course





Butternut Squash and Fried Sage Pasta source epicurious.com

8 ounces whole-wheat penne
1 tablespoon olive oil
8 sage leaves
1 medium red onion, thinly sliced
2 garlic cloves, finely chopped
1 medium butternut squash (about 2 pounds), peeled, seeded and cut into 1-inch cubes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan

Cook penne as directed on package. Heat oil in a large skillet over medium heat. Fry sage, turning once, until crisp on both sides, about 1 minute per side. Transfer to a paper towel. Add onion and garlic to skillet. Cook, stirring frequently, until soft and golden, about 3 minutes. Add squash, 3/4 cup water, salt and pepper. Cover and simmer, stirring occasionally, until squash softens, 5 to 7 minutes. Drain pasta, reserving 1 cup cooking water. Return pasta to pot and add squash mixture; stir over low heat, adding some reserved cooking water if necessary, until pasta is coated, about 1 minute. Serve, garnished with cheese and sage.

Dessert





Intensly Chocolate Mousse Cake source: allrecipes.com


3/4 cup cold water
1/2 cup corn syrup
1/2 cup sugar
1/4 cup cornstarch
1 1/2 (6 ounce) packages BAKER'S Bittersweet Baking Chocolate, coarsely chopped
1/4 teaspoon salt
1/4 cup butter or margarine
3 large eggs, lightly beaten
1 cup whipping cream
Boiling water

Directions
1.Preheat oven to 350 degrees F. Grease and flour 9-inch springform pan. Mix cold water, corn syrup, sugar and cornstarch in large heavy saucepan. Cook on low heat until sugar is dissolved, stirring constantly with wire whisk. Add chocolate and salt; increase heat to medium. Continue cooking until chocolate is completely melted and mixture just comes to boil, stirring constantly. Remove from heat. Add butter; stir until melted. Transfer mixture to large bowl. Refrigerate 15 min. or until cooled, stirring occasionally. (Mixture can still be slightly warm to the touch.) Add eggs; mix well.
2.Beat whipping cream in small bowl with electric mixer on high speed until soft peaks form. Add to chocolate mixture; stir gently until well blended. Spoon into prepared pan. Place pan in larger shallow baking pan, then place on center rack in oven. Carefully pour boiling water into larger pan to come halfway up side of springform pan.
3.Bake 45 min. or until center is set. (Top will feel slightly firm to the touch.) Remove springform pan to wire rack. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Cover top with plastic wrap. Refrigerate 4 hours or overnight. Garnish with chocolate curls, if desired. (See Tip.) Store leftover cake in refrigerator.

LWC - Blue Cheese Appetizers and Blue Cocktails

Lisa's Weekly Coffee: Thinking Blue









When thinking blue for recipes immediately blue cheese comes to my mind.


I love blue cheese and I find it to be an interesting and delighftul cheese for appetizers. I came across several recipes but I've only decided to feature three of my favorite ones: the red onion and blue cheese flat bread, the walnut, arugula and gorgonzola crostini ( my absolute favorite) and finally the asparagus appetizer.





When it comes to thinking blue for drinks and cocktails, I couldn't resist not sharing the Blue Tini, The Blue Bikini and The Blue Lagoon.


When I think of any blue cocktail I think of a very pleasing drink, simply because it looks cool and refreshing. I must add that all the credit, for blue cocktails and drinks, goes to the Blue Curacao liqueur which not only adds the color but also that orange sweetness of all curacaos





Blue Cheese Appetizer Recipes

Walnut, Arugula & Gorgonzola Crostini source: whatscookingamerica.net


Butter, room temperature
18 (1/4-inch thick) slices diagonal baguette bread slices
6 tablespoons toasted and chopped walnuts
3 ounces Gorgonzola cheese, crumbled*
3 tablespoons finely-chopped arugula leaves
Freshly ground black pepper
Arugula leaves

* Blue Cheese may be substituted.

Preheat oven to 400 degrees F.

Spread butter over one side of each baguette slice. Arrange baguette slices on baking sheet, butter side up. Bake until golden, approximately 10 minutes. Remove from oven and cool. NOTE: These can be made ahead of time and stored in an airtight container. Be sure to let cool completely before storing.

Reduce oven temperature to 350 degrees F.

In a medium bowl, mix walnuts, Gorgonzola cheese, and arugula leaves. (At this point, mixture may be refrigerated until ready to use.)

When ready to serve, spread walnut-cheese mixture evenly on top of each baguette slice, pressing in to adhere. Season with pepper. Bake just until cheese melt, approximately 6 minutes. Remove from oven and cool slightly. Arrange crostini on serving platter and garnish with arugula leaves.

Asparagus Appetizers source cooks.com

1 can asparagus spears
1 (8 oz.) pkg. cream cheese
1 egg
1 (3 oz.) pkg. Blue cheese
20 slices white bread, trimmed and rolled

Mix egg and cheeses. Spread about 1 tablespoon on a slice of the bread. Roll 1 spear up in bread. Insert 3 toothpicks in each slice, then cut in thirds. Brown lightly in butter. Keep warm in oven until served or they freeze well.

Blue Cocktails

1.5 Measures Hendricks Gin
1 Teaspoon Peach Schnapps
1.5 Measures De Kuyper Blue Curaçao

Shake all ingredients with ice and strain into glass

1 part vanilla-flavored vodka (recommended: Stoli Vanilla)
Splash sweet blue liqueur (recommended: Blue Curacao)
Fresh or frozen blueberries, for garnishFill cocktail shaker with ice cubes. Add all ingredients except berries and shake well. Pour into martini glass and garnish with blueberries

LWC - Pom Cocktails and Drinks

I love pomegranate because of it's tangy and sweet taste and also for it's health benefits.


Pomegranates are available everywhere from grocery stores to fruit stands and the highly antioxidant juice is also available in many supermarket chains worldwide. It's dark red juice is perfect to mix with drinks and also to add to your favorite recipes.



Every time I host a party I always enjoy serving The Pomegranate Champagne Cocktail, my friends and family always find this cocktail deliciously chic!



In this weeks coffee I thought I'd share with shesdaily.com friends and readers, a few of my many favorite pomegranate drinks and cocktails which includes the Pomegranate Champagne Cocktail.



If you enjoy Mojito's then you'll love the Pomegranate Mojito!! I'm sure your going to love Steve Calabro's video from EatDrinkorDie.com, on how to make this wonderful drink.
For those who prefer non alcoholic drinks I've found the perfect pomegranate mocktail with a sparkling touch.

2 oz Silver Tequila
1 oz PAMA® pomegranate liqueur
1/2 oz pineapple juice



In a tall mixing glass combine all ingredients. Add ice and shake vigorously. Strain into a martini glass rimmed with sugar.

Ingredients:
1 1/2 Oz Bourbon
1 1/2 oz pure Pomegranate juice
1/2 tsp superfine sugar
2 dashes Angostura Bitters
Directions:
Combine all ingredients in a cocktail shaker and shake until the sugar has dissolved. Strain into a chilled martini glass and serve.

•1 1/2 oz Oval Vodka
•1 oz Campari
•1 oz Hiram Walker Pomegranate Schnapps
•1 oz pomegranate juice
•1/2 oz simple syrup
•lemon slice for garnish




Preparation:
1.Combine ingredients in a cocktail shaker filled with ice.
2.Shake vigorously.
3.Strain into a chilled cocktail glass.
4.Garnish with a lemon slice.


The Pomegranate - Ginger Cocktail source: epicurious.com



Ingredients
1 cup pomegranate juice
1 tablespoon sugar
1 1/4-inch-thick slice fresh ginger


4 tablespoons fresh orange juice
1 teaspoon Cointreau or other orange liqueur
1 750-ml bottle brut Champagne, well chilled

Preparation;Boil first 3 ingredients in heavy small saucepan until syrup is reduced to 1/3 cup, stirring often, about 10 minutes. Cool.

Pour 4 teaspoons pomegranate syrup, 1 tablespoon orange juice, and 1/4 teaspoon Cointreau into each of four 6-ounce Champagne flutes. Fill each with 2/3 cup Champagne.

Ingredients
11/2 cups Pom Juice

1 Cup Pear nectar

1/4 Cup Grand Marnier

1 bottled chilled champagne

Steps
Place first three ingredients into a large glass pitcher.

Slowly add

chilled champagne to the pitcher and you have an instant soiree!

Ingredients
1 tablespoon pomegranate juice (freshly squeezed is best, but good-quality bottled juice will do fine)
3/4 cup sparkling apple cider, chilled
pomegranate seeds (optional)
Directions
1Pour sparkling cider into a champagne flute.
2Top with pomegranate juice.
3Garnish with a few pomegranate seeds, if desired. Serve and enjoy!

Learn from Amoy first-hand, how to achieve this ethereal and wind-swept, yet effortless look:



Step 1: Begin by applying the René Furterer Volume Mousse from root to end to achieve texture.



Step 2: Working on dry hair, use a 1-2” curling iron to create a soft wave through the crown. Spray a brush with RF Dry Shampoo to create volume, after adding Amoy Couture Hair clip-on extensions to add fullness and length to the hair.



Step 3: Using a comb, brush back the hair at the root, sweeping the hair to one side and creating a long braid. Continue to comb the braid back to create lose flyaway’s for a soft, renaissance look.



Step 4: After the application of makeup, put on the look’s final touches by spraying the hair with RF Finishing Spray, securing any loose hairs.

Since President's Day is only a few days away and many are going to enjoy a fabulous three day weekend, I thought to myself why not celebrate this wonderful Holiday buy making it special with an absolute easy and fun menu'.
When I think of President's Day, Cherries seem to come to mind. Why is that? One time while visiting in Washington DC i recall seeing the beautiful Cherry Blossoms trees near the white house, what a beauty!!

And now I thought why not search for some fun and delicious recipes to create for my family and obviously share with my friends and readers. I love cherries, they are sweet and absolutely delicious and they easily accompany any meal.

Let's start with a true American cocktail : The American Dream Drink made with black cherry rum. To accompany the cocktail I was thinking something with cherry tomatoes, but when I came across the Double Tomato Bruschetta I simply couldn't resist not including this recipe in the menu. As for an entree, since I love chicken and find it to be a very versatile food which many enjoy why not pinch it up with some cherry sauce, so I'm welcoming The Cherry Chicken!

Ok here comes my favorite part: Dessert! Hurray!! for the Retro Cherry Pound Cake a true American Classic.









American Dream Drink Recipe source: sofakingdrunk.com


1 oz. PAMA Pomegranate Liqueur
1 oz. black cherry rum
1 1/2 oz. Pom Wonderful pomegranate cherry juice
1 1/2 oz. fresh sour mix (2 parts simple syrup, 2 parts lemon juice, 1 part lime juice)
Blueberries and white fondant stars for garnish

Cut mini stars out of white fondant. Wet the back of each star and press into the inside of a cocktail glass so it sticks, then let sit for about 5 minutes. Fill a mixing glass with all ingredients add ice , shake and strain into glass. Garnish with blueberries on a pick if desired

Prepeartion 15 min.
Cook time 7 min
Ready 35 min.



Ingredients
6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese
Directions
1.Preheat the oven on broiler setting.
2.In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
3.Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
4.Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
5.Broil for 5 minutes, or until the cheese is melted.

Ingredients:
2 boneless, skinless chicken breast
1 Tbsp butter
Four
1 cup dry white wine
1 Tbsp sugar
1 tsp allspice
2 cups pitted sweet cherries with juice

DIRECTIONS: Flour chicken breast & brown in a deep fry pan with the butter. Add remaining ingredients, cover & simmer until done.

SERVINGS: 2 TIME: 30 minutes

SERVING TIPS: Serve with steamed rice with pan sauce & a green vegetable.
