I guess as a little girl I always looked forward to Easter knowing I would receive many Easter Bunny chocolates which I really couldn't resist, well I guess all kids think alike. As much as I'd still love to receive chocolate bunnies, instead I guessI'd prefer to enjoy a perfect Easter Cocktail : "The Easter Bunny Cocktail". This cocktail is all about chocolate cocktail with a cherrylicous twist.

KIMJONGILIA, The Flower of Kim Jong Il (Lorber Films), is the first film to fully expose the humanitarian crisis of North Korea, examining the mass illusion possible under totalitarianism and the human rights abuses required to maintain that illusion.



North Korea is governed by a totalitarian regime that has controlled all information entering and leaving the country for the sixty years since the conflict with South Korea. A cult of personality surrounds its two leaders: Kim Il-Sung (“Great Leader”), and his son, Kim Jong-Il (“Dear Leader”). For Kim Jong Il’s 46th birthday, a hybrid red begonia named kimjongilia was created, symbolizing wisdom, love, justice, and peace. The film draws its title from the rarefied flower and reveals the extraordinary stories told by survivors of North Korea’s vast prison camps, devastating famine, and every kind of oppression. Filmmaker N.C. Heikin provides a historical backdrop to North Korea’s situation in her deeply moving documentary that examines why defectors fled, gives accounts of their harrowing escapes, and reveals the dangers they face in China, hunted by both Chinese and North Korean police. The refugees, who were interviewed in South Korea, where they now live, come from every walk of life, from child concentration camp inmates to an elite concert pianist. Their stories, however, all speak to repression and the breaking of body-and-soul. In essence, these humble heroes are inspiring, for despite their unimaginable suffering, they continue to hold out hope for a better future. ABOUT N.C. HEIKIN: A student of dance and theatre at Sarah Lawrence College, N.C. Heikin began working at La Mama Experimental Theatre Club upon graduation, with Wilford Leach and Andrei Serban, among others. There, Heikin created the title role in La Mama’s renowned production, Carmilla as well as a series of interdisciplinary performance pieces, shown in New York City and at theatre festivals around the world. Her performance background is exhibited in the manner in which she has crafted this innovative documentary. In 1986, Heikin began screenwriting with commissions from Paramount and Disney and has since done movies for television and episodic work. Heikin made her film directing debut in 2004, with her prizewinning narrative short, mañana, which debuted on Indiepix in May 2008. Kimjongilia is her first documentary. It received a grant from the Sundance Institute Documentary Film Program and was invited to the Sundance Story & Edit Lab in June 2008. It premiered at Sundance 2009 and has since played in festivals around the world, including the Sarasota Film Festival, San Francisco International Film Festival, Seattle International Film Festival, Docuwest, Hamburg Film Festival, Vancouver International Film Festival, and South Korea’s Pusan International Film Festival.

I love Strawberries because they easily blend well in cocktails, mock tails, drinks and shakes. They make desserts look and taste perfectly delicious. Today I'm featuring a three truly unique and deliciously chic`starwberry cocktails.

The Pretty Woman which is not only chic but refreshing as well. Ciao Baby....." oooo la la" you will need the Collins mix in this, I love this one and dear friends I'm sure you will love it as well.
If you are looking to serve something special with your dessert then the Strawberry Prosecco Cocktail is the one.

30ml malibu

30ml midori

2 large scoops (Finely Crushed) Ice

30ml strawberry liqueur

5 strawberries



1. Blend Malibu, Midori and 1 scoop of ice until a liquid. 2. Seperatly, blend the Straberries, the strawberry Liqueuer and another large scoop of ice untill icy. 3. Pour the first mixture into a 10oz Hurricane Glass. 4. Pour the second mixture on top of the first, make sure they remain seperate (the second mixture should be layered atop the first one, they souldn't mix much) 5. Use the remining Strawberry, cut a slit in it and place it on the rim of the glass to garnish and stick a little umbrella through it. Don't forget a straw. That's it, enjoy your cold icy cocktail!


The cocktail, when made will have 2 distinguishable colors. Green on the bottom and a pink layer on top of it. Though this is good for presentation, the green layer is quite strong, I suggest stiring with the straw a little before drinking to mix the two together.

Instructions
Blend with 16 oz. of crushed ice until the mixture is slushy.









Strawberry Prosecco Cocktail

Ingredients
1 1/4 cups frozen sliced strawberries with sugar, thawed
1 (750ml) bottle prosecco, chilled
6 small strawberries, washed

Instructions
1. Purée sliced strawberries and any juice in a blender or food processor. Press mixture through a mesh sieve into a bowl to remove any seeds; chill 30 minutes.
2. Combine strawberry purée and prosecco in a large pitcher and gently stir to combine. Pour into 6 champagne flutes. With a sharp knife make a small slice in the bottom of each strawberries, about half the way through. Slide a berry onto the rim of each glass. Serve immediately. Serves 6.

LWC - Rainy Days





Lisa's Weekly Coffee - Rainy Day Soups











When it rains the weather tends to be cold and damp meaning we tend to avoid the outdoors and we are more likely to stay home. For many, rainy days seem to be boring and at the same time a sad day but for me I find it to be the perfect day to dedicate it to a hobby or even the perfect time to cook up something special for me and my family. Like I mentioned before, when it rains it tends to be cold, therefor wouldn't we all love to have something that warms us up. So hello Soup! yes soup would be the perfect comfort food for the day.



I always like to give a twist to traditional soups and I've found three of my favorite soups with that added zing to it that I though would be perfect to share with my readers. How about the traditional Rainy Day Soup with some thick and chunky salsa or maybe the Rainy Day Potato Soup with cheddar and broccoli or for all lentil fans you'll love the Rainy Day Lentil Soup with a touch of vinegar.

12 servings Prep. 20 min. Cook time 1 hour

Ingredients:

1 pound ground turkey
1 can (46 ounces) V8 juice
1 jar (16 ounces) thick and chunky salsa
1 can (14-1/2 ounces) chicken broth
1 can (16 ounces) kidney beans, rinsed and drained
1 package (10 ounces) frozen mixed vegetables
4 cups shredded cabbage
1 cup chopped onion
1/2 cup cubed peeled potatoes
1/3 cup medium pearl barley
Directions
In a Dutch oven coated with cooking spray, cook turkey over medium heat until no longer pink; drain. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until the vegetables and barley are tender. Yield: 12 servings (3 quarts).

2 cups lentils, uncooked
8 cups water or vegetable stock
1 med. onion, chopped
2 small carrots, thickly sliced
1 rib celery, chopped
1 large potato, peeled and cut into large cubes
2 bay leaves
1 vegetable bouillon cube (optional, if water is used instead of stock)
1 tsp. crushed coriander
1/2 tsp. cumin
freshly ground pepper, to taste
2 cloves garlic, minced
salt, to taste
2-4 ounces fresh spinach (chopped if large leaves)
2 tsp. Red wine vinegar

Pick over the lentils and wash.

Start the water or stock heating in the pressure cooker while you chop the vegetables. Add all ingredients except the garlic, salt, spinach, and vinegar into the cooker and bring to a boil. Seal the cooker and cook at high pressure for 10 minutes. Remove from heat and allow to sit for 5 minutes before using a quick-release method to release the pressure. (If you don't have a pressure cooker, you can simply cook this on the stove until the lentils are tender, about an hour.)

Check to make sure the lentils and potatoes are tender; if not, cook, covered but not at pressure, until done, adding water if it seems too thick. Add the garlic, salt and spinach, and check the seasonings, adding more cumin and coriander as needed. Cook for just a couple of minutes to wilt the spinach. Stir in the vinegar at the end and serve
.




Rainy Day Potato Soup

Broccoli, Chicken, Cheddar and Potato Soup
Prep time: 15 minutes
Cook time: 35 minutes
Start to finish: 35 minutes
Cost per serving: $2.00

Ingredients:
2 cups stock or reduced-sodium broth
1 1/4 lbs. white potatoes, peeled and cut into bite-size cubes
2 stalks celery, chopped
1 medium onion, chopped
1 small carrot, peeled and chopped
1 cup fat-free half and half or milk
1/2 teaspoon thyme or Italian seasoning
1 cup small broccoli floweretts
1 cup diced cooked chicken
1 cup reduced fat sharp Cheddar cheese
Sea salt or garlic salt to taste
Freshly ground pepper to taste

Directions:


Bring broth to a boil in a large saucepan. Chop vegetables while broth is heating, then add to saucepan. Return to a boil; reduce heat and simmer, covered, for 20 minutes. Let cool slightly, then puree until smooth, or until soup is desired consistency. Stir in remaining ingredients and cook for 10 minutes more. Makes 4 servings.

LWC - Spring in the Zucchini

Spring in the Zucchini ! As spring is blooming so are zucchini. They are a very popular vegetable but not a favorite to many. I love zucchini therefore I thought I'd share a few delicious recipes that are sure to be tempting: Salad - Entree Dish and Dessert .







Quick and Simple Zucchini Salad













Cook sliced zucchini in salted water, then drain and allow to cool. Dress them with olive oil, anchovies, oregano and pepper.











Zucchini Loaf


Ingredients

1lb. 12 oz. zucchini
1/2 onion
1 clove garlic
8 tbsp. extra virgin olive oil
1 bunch of parsley
3 medium potatoes
4 eggs
4 tbsp. grated Parmesan cheese
nutmeg
marjoram
salt
pepper
breadcrumbs




Preheat oven to 380 degrees. Clean the zucchini and cut them in thin rounds. Finely chop the onion and garlic. Heat the oil in a deep frying pan and lightly brown the onion and garlic. Add the zucchini. Mix well. Cover the pan and cook over low heat for about 15 minutes. Chop the parsley and sprinkle over the zucchini. Mix well and remove from the heat. Pour the zucchini in a large soup bowl. Boil, drain, peel and puree' the potatoes, then add them to the zucchini. Add the eggs, parmesan, a pinch of each nutmeg and marjoram. Blend well. Season with salt and pepper. Smear the bottom and sides of a baking dish with olive oil and sprinkle with breadcrumbs. Pour the zucchini-egg mixture and baste with Olive oil. Bake at 380 degrees fro about 40 minutes. Serve ( can be served warm or cold)
















Summer Penne with Apple Aroma


Ingredients for 6


1lb. penne
3 zucchini
2 onions
2 tomatoes
2 red apples
1/2 sweet pepper
6 2/3 tbsp. extra virgin oilve oil
10 small basil leaves
1 tbsp. chopped parsley
salt
pepper





Clean the zucchini, onions, tomatoes, apples and sweet pepper and cut into small cubes. Put the cubes in a blender ad reduce to puree' adding oil to secure a creamy consistency. Season with salt and pepper. Chop the basil and parsley and blend with puree. Pour the mixture into a large soup bowl. Cook the pasta until al dente. Set aside several tablespoons of water, drain the penne and combine with the sauce. stirring in a few spoons of water. Serve immediately.
















Zucchini Cake




Ingredients

2lb. zucchini
1 oz. raisins
2 tbsp. sugar
salt
1 tbsp pine nuts
1 tbs. candied citron
1 oz. cooking chocolate
1 oz. dry sweet biscuits ( plain biscotti)
2tbsp. breadcrumbs
6 eggs
butter




Heat oven to 350 degrees. Cut the squash in thick slices and bake them in the oven until they are soft. Remove the skins and pass the zucchini through a sieve or food mill. Soak the raisins in a bit of warm water. Add the sugar, pinch of salt, the raisins and pine nuts to the puree. Cut the citron and chocolate into small pieces, crumble the biscuits and add them to the puree, along with the breadcrumbs and eggs. Blend well. Cover the bowl with a towel and let the mixture sit for about 30 minutes.





Butter a mold with a well in the center (bundt pan) and fill it with the batter, which should come up virtually to the rim. Put the mold in a pan partly filled with hot water. Put the cake in the oven ( 350 degrees) and bake for 40 minutes. Remove from the oven and allow the cake to cool before removing it from the mold.

Tip: the cavity can be filled Zabaione cream or any other creamy preparation.

LWC - Celebrating Woman's Day! May I have a Mimosa?



Lisa's Weekly Coffee is Celebrating Woman's Day! Would You Like a Mimosa??


Women's Day ( Festa Della Donna)
is celebrated each year in
Italy on March 8 and it is symbolized by the mimosa flower. On Woman's day men offer women the mimosa flower as symbol of love and friendship.

Since mimosa's seems to be the highlight of month I thought I'd share with my readers two great recipes: The Mimosa Cocktail and The Mimosa Cake.


The Mimosa Cocktail known to be a favorite cocktail and a`very popular one as well, usually it is served in special occasions such as Mother's day Brunch. I don't see any reason not to have a mimosa cocktail in honor of "Woman's Day". I find it to be deliciously chic.

La Torta Mimosa or the Mimosa Cake is a very popular dessert in Italy. A delicate sponge cake filled with chantilly cream is a true delicacy to anyone's palate, it is elegant and it is sure to be the star attraction to any party. The cake topping resembles the mimosa flower.





The Mimosa Cocktail source-dianadesserts.com


Ingredients:
1 cup fresh blood orange juice (from about 6 blood oranges), or 1 cup fresh juice from regular juice oranges
1 bottle Champagne, chilled
Orange slices and mint sprigs for garnish (optional)

Make it a Gran Mimosa Cocktail by adding Gran Marnier
or for the non alcoholic version try The Mimosa Mock tail by substituting champagne with 7-up or sprite.


Instructions:
Pour 1/4 cup juice into each of 4 champagne glasses. Slowly add champagne (or regular or diet 7-up or gingerale, if using). Garnish each champagne glass with an orange slice and mint sprig, if desired. Serve immediately.

Makes 4 servings.

For sponge cake
•2 ½ oz all-purpose flour
•2 ½ oz potato starch
•5 oz sugar
•6 eggs
For chantilly cream
•2 cups milk
•2 eggs
•2 egg yolks
•3 ½ oz sugar
•1 oz all-purpose flour
•1 lemon zest
•½ stick vanilla
•7 oz cream
•1 ¾ oz powdered sugar
For syrup
•1 cup water
•½ cup Kirsch (dry cherry liqueur)
•3 oz sugar
Preparation
1 hour and 30 minutes preparation

LWC- Spring Fever Cocktails and Drink

I guess by now we are all happy about winter leaving us soon and excited about Spring! The Fever is on and with it comes the idea of refreshing fruits, April showers and obviously flowers in bloom. Wouldn't it be wonderful if we can start celebrating Spring with some exciting and deliciously refreshing cocktails inspired by the Season itself ? Of course it would!

I've chosen, to share with my friends and readers, some of my favorite Spring fever cocktails. For fruits I've chosen the refreshing Fizzing Cherry Cocktail, for rain what better choice than the April Rain Drink and finally for flowers I couldn't resist not sharing this traditional but with a twist of refreshing sparkle the Lavender Sapphire Collins.

These drinks and cocktails are great for Spring time parties and celebrations!









Fizzing Cherry Cocktail source- in-the-spirit.co.uk

De Kuyper Cherry Brandy
2 Measures Orange Juice
1 Measure Lime Juice
Top up Lemonade
0.5 Measure Sugar Syrup

Shake first four ingredients listed with ice and strain into a glass half filled with cubed ice. Top up with lemonade and gently stir. Garnish with a wedge of orange or lime.







April Rain Drink source: sofkingdrunk.com

2 oz vodka
.5 oz lime juice
.5 oz dry vermouth
Lime peel

Pour the ingredients into a cocktail shaker with ice cubes and shake well. Strain into a chilled cocktail glass and garnish with the lime peel.








Lavender Sapphire Collins source: examiner.com

1 1/2 oz Bombay Sapphire Gin
3/4 oz fresh lemon juice
1/2 oz lavender syrup (recipe below)
3 oz club soda
Squeeze half a lemon into a Collins glass, add lavender syrup and gin. Stir and fill with ice. Top with club soda and garnish with a lemon wedge.


Lavender Syrup

2 cups sugar
2 teaspoons dried or 1/4 cup fresh lavender blossoms
1 cup water
Bring all ingredients to a simmer in a saucepan, stirring until sugar dissolves. Remove from heat, and cool. Cover and store in refrigerator.
