Anyone Care for Panini

Panini's are in! There are many ways to make panini's. They can be served hot or cold, they can be savory or even sweet. One can create their own panini based on their taste and style. I personally enjoy a healthy style panini rich with my favorite veggies though I have have to admit that at times I crave for something sweet just like the Nutella Strawberry panini below.

•Feta cheese–sliced from a brick is best; salad crumbles can be messy
•Roasted red peppers
•Artichoke hearts
•Black olives (optional)
•Cracked black pepper (optional)

Grilled Portobello Mushrooms and Sun-Dried Tomato Panini source: cookeatshare.com

Serves 2

2 large portobello mushrooms, sliced 1″ thick
4 tablespoons sun dried tomato, chopped
2 slices low fat colby cheese
4 tsp dijon mustard
4 tsp butter
4 slices sprouted wheat bread

Preheat panini grill.
Grill sliced portobello on panini grill until just tender. About 3 minutes.
Remove from grill.
Spread mustard on bread slices.
Top with mushrooms and chopped sun-dried tomato and cheese.
Grill until cheese melts. About 4 – 5 minutes.

•Chocolate-hazelnut spread (Nutella)
•12 (1/2") slices pound cake
•fresh strawberries, hulled and thinly sliced
•Butter-flavored nonstick cooking spray

Directions
1.Heat a panini grill. Spread the Nutella on 1 side of all of the pound cake slices.
2.Arrange the sliced strawberries over 6 cake slices. Cover with the remaining cake slices, Nutella side down.
3.Spray panini grill with nonstick spray. Grill each panini until the pound cake is crisp and golden and the filling is warm, about 2 minutes.
4.Top with more sliced strawberries, if desired. Serve warm.

Happy hour is known to be a fun hour with friends drinking cocktails, talking about our day either it was a great one or a sad one, one share jokes and everyone laughs basically we all end up being happy and we smile. I thought I'd share with my readers a few happy cocktails that are sure to add that extra smile on one's face. These cocktails are perfect for springtime and summertime. They can easily anticipate a dinner, be enjoyed at a party or barbecue or whatever the occasion be, it sure will bring out cheers of Joy!

2 oz brandy
1 oz fresh grapefruit juice
1/2 oz honey syrup

Shake all ingredients with ice and strain into a small martini glass

1/2 oz Beefeater® gin
1/2 oz Absolut® vodka
1 oz Cointreau® orange liqueur
1/2 oz tonic water
4 - 8 oz orange juice
1/2 oz pina colada mix
1 whole egg



Pour gin, vodka, liqueur, tonic and pina colada into a cocktail shaker half-filled with ice cubes. Crack an egg and drop into shaker. Shake well and strongly. Pour the shaker contents (with ice) into glass and fill up the glass with orange juice. Garnish with two cherrys and a slice of lemon with puting it on the top of the egg foam so that it makes a happy face.

I love shopping at Marshall's department store especially at their gourmet section. I always stop by the coffee and tea section just to see what new and exciting flavors they have. As I came across the VYKASA Pomegranate Red Tea, I immediately say to myself : "this tea would not only be good hot but it would also make a refreshing summer beverage".

I went home and brewed up a cup of tea added some sugar and allowed it to chill in the fridge.
OH MY! I was right! It is totally refreshing and smells so sweet , its like sipping a cup of fresh berries.Simply Delicious!

The pomegranate red tea is a combination of black and green tea with just enough of the sophisticated and exotic sweet pomegranate, that truly brings out the richness in the beverage and obviously it is also important to highlight it's healthy benefits. Pomegranate tea is a great antioxidant tea either hot or cold.

The Jewish Board of Family & Children’s Services (JBFCS) celebrated its Annual Spring Benefit, Made in New York, fêting the work and support of JBFCS Board of Trustees Chairman, John A Herrmann, JBFCS Vice President David F. Everett and renowned philanthropist, media and business mogul, Russell Simmons, Co-Founder of Def Jam and the Foundation for Ethnic Understanding. Celebrating Earth Day!

Earth Day should be celebrated everyday because the Earth is Beautiful! As a celebration to our spectacular Earth I want to share a few of my favorite drinks, which include one cocktail and three organic drinks. The Greentini cocktail ( make it earth friendly by substituting it with organic vodka), and for the organic drinks I like: Pom-aniac, Organic Globe Drink and finally The Planetary Punch. The pom-aniac drink is so refreshing and delightful! Pomegranate, lemon and cucumber come together with a harmonious bitter campari....um um!!
You'll enjoy the Organic Globe as the simple syrup along with the organic vodka and orange juice make a delightful drink to celebrate this beautiful day.
Finally the Planetary Punch is the absolute of all favorites as we celebrate the Earth with it's tropical delights.

1.5 ounces melon liqueur
Shake with ice and strain into a martini glass
Garnish with a lime wedge



Organic Drinks

Big, brassy pomegranate and lively lemon find a counter beat in smooth maraschino cherry and cool cucumber, but it's that crucial splash of bitter Campari that really makes this symphony of flavors come together in delicious harmony.

1 thin peeled organic cucumber round, quartered
2 ounces organic pomegranate juice
1 1/2 ounces Square One organic vodka
1/2 ounce freshly squeezed organic lemon juice
1/2 ounce organic agave nectar
Splash of Campari
1/2 ounce maraschino liqueur or Cointreau
Club soda or sparkling mineral water
Organic lemon twist for garnish


In a tall glass, alternate the pieces of cucumber with layers of crushed ice. Pour the pomegranate juice, Square One organic vodka, lemon juice, agave nectar, Campari, and maraschino liqueur into an ice cube-filled cocktail shaker. Shake vigorously for 30 seconds, then strain the mixture into the glass. Top off with club soda and garnish with the lemon twist.





Organic Globe Drink Recipe


2 oz Vodka Organic (Square One)
1 oz Ice wine
.5 oz Fresh Orange Juice

1 oz Simple Syrup



Planetary Punch

Ingredients:
•1 1/4 oz 360 Vodka
•3/4 oz melon liqueur
•1/2 oz peach puree or daiquiri mix
•1 oz orange juice
•1 oz pineapple juice
•maraschino cherry for garnish
Preparation:
1.Pour the ingredients into a cocktail shaker filled with ice.
2.Shake well.
3.Strain into a chilled cocktail glass.
4.Drop a cherry into the glass for a garnish.

While pizza is to be found in just about every corner of the world, its popularity in its land of origin has never diminished. Pizza is as popular today in Italy as it ever has been. Have you ever wondered where in Italy the best pizzas can be found?

Seeing as much of Italy appears to be fuming over the latest escapade of the Berlusconi government, I felt it might be nice to take a break from politics for a moment and to look at a distinctly more appetising subject, which is also much easier to digest: pizza.

Italian author Orietta Boncompagni Ludovisi has had her book “The Best Pizzerias In Italy” republished some five times since it first appeared in 1996. Each time a new edition of Boncompagni Ludovisi’s pizza book hits the bookshops of Italy, it sells like hot cakes. Perhaps that should be “sells like hot pizzas”.

Anyway, I was reading a copy of what I’ve been told by our local news-stand is one of Italy’s best selling travel magazines, Dove, and I found a delicious article all about pizza. Don't you just love mint? As summer approaches I find it to be a delightful and refreshing herb to add to some of my favorite dishes. Mint also adds refreshing and delicate touch to many drinks and cocktails. Don't you just like to see the green minty leaves in your drink?!
Today I want to share with my readers a true delicacy of minty recipes: My favorite Peas Mint Recipes - Savory Jade Chicken - ooH La LA!! Slice of Heaven Mint Dessert and The Midnight in Sicily Drink



Peas Mint Recipe: source: whiteonericecouple.com





2 cups fresh or frozen peas


2 tbs shallots, minced (abot 1 large shallot)
1 tbs olive oil
1 teaspooon soy sauce or Tamari Gluten Free Soy Sauce
handful fresh mint (minced)
1. In heated saute pan, add olive oil and shallots. Cook for about 1 minute or until shallots are soft and fragrant .

2. Add peas, cook for about 1 minute or until peas are tender. Add soy sauce. Cook for about another 30 seconds. Remove from heat .

3. Pour peas into serving bowl and toss with fresh minced mint leaves.

4. Serves about 2-3.

The texture and flavor contrast between the fried and fresh mint is simply delicious. This recipe does not use much oil, and it is superquick.


(Makes 4 servings)

1 tablespoon soy sauce
2 teaspoons cornstarch
1 pound boneless, skinless chicken breast or thigh meat, cut into 1-inch pieces
1/4 cup vegetable oil
3/4 cup lightly packed fresh mint leaves
1 red jalapeño chili, thinly sliced
1/4 cup Chinese rice wine or dry sherry
1 tablespoon chili garlic sauce
2 teaspoons sesame oil

•Brownie base:
•· 4 tbs. butter
•· 2 oz. unsweetened chocolate
•· 1 cup sugar
•· 2 eggs
•· 1/8 tsp. salt
•· ½ cup plus 2 tbs. flour
•· 1/3 cup chopped Andes candies
•Chocolate Ganache:
•· 9 oz. semisweet chocolate, chopped
•· 1-cup heavy whipping cream
•Filling:
•· 12 oz. cream cheese, room temperature
•· 6 tbs. butter, room temperature
•· 2 cups white chocolate chips
•· 1 tbs. solid vegetable shortening
•· 3/8 tsp. peppermint extract
•· 3-4 drops green food coloring (optional)
•· 1/3 cup chopped Andes candies

Directions
1.For brownie base, preheat oven to 300 degrees.
2.Coat a 9-in. spring form pan with vegetable oil spray.
3.In a double boiler or microwave, melt butter and unsweetened chocolate.
4.In a medium bowl, beat sugar and eggs. Gradually add chocolate mixture. Mix in salt, flour, and vanilla; add Andes Candies mints.
5.Pour batter into prepared pan and bake for 20-30 minutes or until toothpick inserted near center comes out clean.
6.Cool completely.
7.Meanwhile, for Ganache, place chocolate in a small bowl. In a small saucepan, heat cream and bring just to a boil.
8.Pour hot cream over chocolate and whisk until smooth. Allow to cool slightly before using.
9.For filling, in a medium bowl, combine cream cheese and butter and mix to combine.
10.In a double boiler or microwave, melt white chocolate and shortening and mix well.
11.Add to cream cheese and beat just until smooth.
12.While mixture is beating, add extract and food coloring, if desired. Fold in Frango mints.
13.Smooth filling over top of cooled brownie base and chill until firm, about two hours.
14.Top with Ganache and chill until firm; 30- 60 minutes.
15.To serve, remove sides of spring form pan, garnish as desired.
16.Cut into small wedges.

Ingredients
6 Mint Leaves - (more)
1 1/2 oz. Averna Bitters - Amaro - (more)
1 oz. Tanqueray Gin - (more)
1/2 oz. Sweet and Sour Sauce Blood Orange Agrodolce - (more)


Instructions
Combine ingredients in an ice filled cocktail shaker and shake for 20 to 30 seconds, or until well chilled. Double strain through a fine meshed strainer into a chilled cocktail glass. Garnish with a flamed blood orange rind.
