Rum Pineapple Dessert

This isn't one of my natural/healthy recipes so I will come up with a modification of this and make another post. To be honest recipes are just ideas for me. Most recipes spur the creativity and then I modify as needed and typically create something totally different from the original recipe. That is always the fun part of cooking, and you never know what might come out of my kitchen!

There is an abundance of fresh pineapple and rum in Belize so this is a quick and fun dessert to make for friends that drop by. This works best if you can use fresh pineapple and other fresh fruits.

Fried Rum Pineapple (serves 4)

Ingredients
1 whole pineapple
2 TBS dark rum (or try coconut rum)
1 TBS Sunflower oil

• Cut one large pineapple into small bite size pieces


• Place the pineapple in a non-stick frying pan over a medium heat with oil (if you choose you can use butter)


• Cook till pineapple turns golden brown


• Turn off heat and poor rum over the pineapple


• Let it mix with the pineapple juice in the frying pan


• Place the pineapple pieces in serving dishes


• Pour remaining juice from the pan over pineapple pieces

You can serve this with homemade vanilla ice-cream or combined with other tropical fruits. If you really wanted a super sweet dessert drizzle some melted chocolate over the pineapple pieces right before you serve to your guests. (now that is dangerous).

There are many variations that could be developed from this recipe. One in particular that I am thinking of trying is using coconut milk instead of oil or butter and also fresh coconut pieces. Some other variations might be to sprinkle cinnamon, nutmeg, ginger or any of your other favorite spices.

It's the presentation that is important also so don't forget the fresh flowers, other fruits or use some of the outside of the pineapple to decorate your serving plates. I always like the look of the pineapple greens. You can be creative using those as a decorative touch.

Now I never want to be wasteful. I might have bought a bottle of rum just for this dessert so to use the rest of the rum maybe you could enjoy a tropical drink with your dessert.

Add a Splash of Color

Another trick is to wear colorful blazers or jackets on top of the black outfit; it not only adds excitement but also gives an updated look. Play around with different colors; keep in mind the color palette that complements your skin tone.

Play with Different Textures

Take advantage of the wide range of fabrics available in stores and online, mix and match them to get a more versatile look. You can wear a comfortable knitted top with leather pants, evening dresses with layered chiffon and satin softens the look or you can also go for black lace. A beaded black evening dress is a great way to look sophisticated, polished and exciting all at the same time.

Summer in Black

Black is not exclusive for the winter or fall months alone. It can also be worn in warm weather. Just keep in mind the style and fabric when wearing a black outfit or evening dresses for the summer. Wool and other thick fabrics that do not breathe well are of course, big no-no's. Stick with light, airy fabrics and dresses that show off some skin, it is summer after all.

The following article will help you discover how to apply makeup in the evening. Applying makeup in the evening is different to applying makeup for the daytime. With evening makeup you can have a more dramatic look so you don't get lost amongst the candlelight.

Your face can speak a thousand words, if you dress it right. The next time you are getting ready for an evening function, here are some top tips on how to apply your makeup to suit an evening function:

1. Make sure you use your eyeliner correctly. Eyeliner is much easier when using a pencil. Choose the right pencil shade for your and make sure it is sharp. Make sure the tip of the pencil is a smooth and pointy finish to make it easier to apply. Keep the skin tight and hold the eyeliner with a steady hand and start from the outside corner of the eye following the lash line. Don't go on the eyelid too much follow the eyelash hair. Remember you can always add more so start with a small sharp line and add more later if you wish. Once you have finished put on lots of mascara on the eyelashes. If you use false eyelashes, add these at the end of application.

2. Choose the right eyeshadow color. Decide whether you suit cool shades such as light blue, light pink or yellow or dark shades such as brown, deep blue, red. Choose a color that suits your skin type and clothing. A hot shade and trend for eyeshadow is purple. If you are not that bold, you can settle for shades of pink, brown or beige depending on your skin tone. Metallic colors like gold and silver are also perfect for evenings.

3. Another great trend for the evening is a smoky eye. To achieve a smokey eye look you can use any color shade. The rule is to start with the deepest shade on the eyelid till the crease and gradually go lighter as you go up your eye crease. Use the brightest shade of the same color on the inner eye corner in shape of a question mark. The darkest color also goes below your lower eyelashes.

4. Keep the lip color simple. If you decide to have dramatic eyes make sure your lips are soft and vice versa. Be sure to choose a color that suits your eyeshadow and clothing. You can mix shades of gloss or lipstick to get your desired shade. Apply lip liner first, followed by lipstick, followed by lip gloss to ensure your lip color lasts all night!

5. Dramatic eyebrow is another makeup tip for the evening. High fashion designers such as Nina Ricci and Prada are embracing a dramatic eyebrow look. The rest of the foundation is kept nude with a bit of concealer and shimmer to the cheeks. Your eyebrows should be 2 shades darker than your hair color. Use a brow pencil to contour your eyebrows.

The rule of dramatic eye makeup is that you keep the other part of your face neutral. Use a lipstick that is as close to your natural lip color as possible. A slight touch of blush on the cheeks and you are ready for your evening function.

If you are in your forties and beyond you may have faced these questions about your body, energy level, and muscle tone.

In case you didn't hear me, the answer to all of the above is NO! It's no wonder women in their forties have a tough time with aging and understanding themselves. You may have heard it said that 50 is the new 40, and we all know 30 was already wonderful. But where does that leave 40?

Fabulous: You were born fabulous and are already fabulous without improvement. Believe in yourself! This one action alone, the action of feeling OK with who you are, at any age, can motivate you take one small step toward getting in touch with that part of you that you've been missing. It is just one small movement, motion, action, thought, that can change the course of your day. So, again, Believe in YOU!

Fit: The goal: fit mind, fit body and fit soul. But, we can't put 100% into everything at the same time. Choose what you will focus on and try to touch upon the others in for daily balance. Will you dance, go for a walk, do a 10 minute routine, take baby steps or jump in with both feet?

Fantastic: Even with all it's challenges, life is fantastic. I think finding ways to remember this is integral to the motivational aspect of staying healthy and fit. You may want to try practicing gratitude. One of my favorites is a book called "Simple Abundance" and it accompany journal, "Gratitude Journal" by Sarah Ban Breathnach. One of her recommendations is this: each night write five things that you are grateful for. I've done this, it's great. You'd be surprised what an amazing tool it can be to living a fantastic life!

Forty: Ugh, right. No! Forty is the New Fantastic!

Summer Skincare - What's Hot and What's Not!

As the temperatures rise, the needs of your skin change. We're not only talking sun protection, although that is certainly an important component, we're also thinking about what your skin needs to adjust and be safe and happy in the warmer temperatures. Here are a few basic tips:

* The Sun & Oily Skin - If you have oily skin resist the temptation to over scrub your skin to control oil and shine. Over rubbing your skin will only stimulate the sebaceous glands and actually create the very condition you're trying to avoid, i.e., excessively oily skin (not to mention that it can cause more severe breakouts). It can be helpful to choose products that contain algae which detoxifies your skin and helps to control the oil.

* Don't be lured by the drying effects of the sun. Although it might initially feel like the sun is drying up the oil and clearing up your skin, it actually thickens the skin (hyperkeratosis) blocking your pores and leading to more intense breakouts shortly down the road. Believe me. I know this first hand from when I was a teenage...a day or two of fewer breakouts (albeit sunburned skin!) and then. Yikes...let me just say, it was not a pretty picture! The reprieve is very short-lived! If you are taking antibiotics to control acne, beware that it also causes sun sensitivity so applying a sunscreen is critical.

* Sensitive Skin - If you have sensitive skin stay out of the sun as much as possible, always (that means every day even if you are not planning to spend prolonged time in the sun) protect your skin from the sun when you are outside (preferably with active ingredients titanium dioxide and zinc oxide), and choose skin care products designed for sensitive skin.

* Mature Skin - Choose your Age Management skincare routine wisely. If keeping a youthful appearance is your ultimate goal (and for most of us over 30 it is!), be careful what you use during the summer months. Alpha hydroxy acids, which many people use daily or as a special facial treatment, make your skin ultra-sensitive to the damaging effects of the sun. In other words, AHA's will not only make you burn more easily (and you're burning more virgin skin!), but they make you more susceptible to hyperpigmentation (sun spots) which is what you are trying to avoid or diminish by using them in the first place. If you continue to use Alpha Hydroxy Acids in the summer, apply them at night and be diligent (I'm not kidding!) about sun protection. If you don't, you're wasting your money and run the risk of further damaging your skin. Ditto for Retin-A users.

* Sun Protection - Sun protection has become a complicated and huge issue these days. When to apply, how much to apply, what number to apply, what spf ingredients to use, when (not if!) to reapply! Yikes! It can make you crazy. So, let me give you a few tips to demystify it:

o Bigger doesn't necessarily mean better. There is very little difference between the protection in an SPF 30 and SPF 45 or higher and it often gives people a false sense of security about reapplying. Yes, no matter what number you use you need to reapply if you are out in the sun for any length of time beyond running errands.

o Be sure it protects for UVA as well as UVB - it has to say so on the bottle (the SPF factor only applies to UVB rays). And, two of the best ingredients are zinc oxide and titanium dioxide (with no nanoparticles). In case you are wondering if it really matters, let me share with you that 80% of any discoloration or aging spots you see on your skin are a result of damage from the sun. That said...

o Not all sun exposure is "bad!" Apply sunscreen to your face and chest every day but leave your arms free from sunscreen several times a week while you are out in the sun for 15-20 minutes. Your body needs Vitamin D, and the most natural source is the sun. In fact, the majority of people are vitamin D deficient (especially those in the northern areas where you cannot get vitamin D from the sun for at least 6 months of the year!)

I know from personal experience how a vitamin D deficiency can wreak havoc on your health. Trust me, if you have not experienced that, it's not nice. Your body needs vitamin D and the best way to get it is naturally from the sun (and, that said, definitely take a vitamin D (preferably vitamin D2 so that no animals are harmed (and it's just as effective as vitamin D3)).

I am super pale and here I am sitting on the beach for 15 minutes with my arms free and clear to absorb my vitamin D naturally.

* Natural is better. When it comes to sun protection, natural is better. Remember, your skin is the largest organ in your body so whatever you put on it is absorbed. Until the FDA allows even more natural sunscreen ingredients (like natural botanicals) to be marketed that way, zinc oxide and titanium dioxide (non-nanoparticled) provide the best protection with the least health concerns.

* Eat your veggies. I am into health and nutrition - always have been, and I can tell you it pays off. In this case, it helps with sun protection. Say what? Yes, you heard right. Eating your veggies offers you incredible antioxidant protection inside your body (which is where all skin cancers (and other cancers, obviously) start). I'm not talking about a couple of bites of broccoli. I mean...Eat Your Veggies! Lots of them at every meal.

Although each person's skin is different and has individualized needs, these are a few basic (very basic) guidelines to follow through the summer months. Having had acne when I was a teenager I understand the confusion out there around what to use to take good care of your skin.

Good skin care habits do make a difference in the look and health of your skin and since we look at our face very day it often directly impacts our self-esteem and self-confidence. The better care you take of your skin the happier you'll be when you look in the mirror.

1. Tailor it to YOU and YOURS. Each circumstance is different and personal. Your likes and dislikes are not the same as the next person. Making your moment special could mean:

- Making a favorite meal that you don't make very often.

- Cooking something together if your partner also enjoys the process. (You can still make him/her feel special by having the ingredients all set out and any chopping done ahead of time. This will make the meal go together quickly and is much more fun. Everyone loves having a Sous Chef!

- Making something you don't particularly like to cook, but you know your partner will appreciate it if you make it.

- Choosing a favorite ingredient and including it in each course (e.g. coconut would be one of my choices. My husband and I both love it.)

2. Keep it simple. Remember that the purpose of a date night meal is romance, not hours in the kitchen. Simple, healthy foods that are presented in a pretty way are always welcome. What matters is the flavor, not how complicated it is. Use your spices and taste everything before you serve it to be sure that it's just right.

3. Explore "make ahead" options. Plan your meal and shop ahead. Many things can be purchased a day or more ahead. As well, many things can be chopped and organized well ahead. Don't leave too much to the last minute. You want to have energy to engage with your partner. Make sure you protect your energy source so you're not nodding off in your soup!

4. Don't try anything too exotic. This might not be the time to try something new. Comfort food is just fine. Go with the known bet and don't risk disappointment.

5. Make it pleasing to the eye. Pay attention to presentation! Nothing makes a person feel more special than knowing someone else has really fussed over something for them. Take that extra minute or two to carefully present what you have made. A few ways to make your presentation look special are:

-Make portion sizes equal. It looks more professional.

-Use a scoop to mound dishes like risotto or potato salad.

-Cut meats with a sharp knife so you have clean, straight edges.

-Use edible flowers as accents. (You can buy small amounts of them in many grocery stores and markets.)

-Garnish! Snips of fresh herbs make colorful, attractive garnishes. Choose an herb that coordinates with the spices/herbs in the dish. Other great garnishes are tiny bits of chopped, colorful bell pepper, egg yolk pushed through a sieve, tiny strips of carrot and tips of asparagus spears. Don't throw out small amounts of leftover vegetables. You can always use them in this way! They add color, interest and a little extra nutrition.

-Plan your meal with an eye toward nutrition but also to color and how it will go together on the plate.

6. Serve more than one course. It's easy to fall into a rut as a parent. Whether you work outside the home or not, life is busy, hectic and tiring. It's tempting to grab something on the run or throw together a one dish meal. Your partner will be impressed if you come up with more than one course and it isn't that hard. The first course could be a "store-bought" soup (with a garnish of course!). The second could be something special you made yourself and dessert could be ice cream with a special sauce or berries or something also purchased from the store.

This is the time to think about any leftovers in your refrigerator. Is there anything that could be re-worked to become a course on its own? For example, if you have leftover risotto, you can form it into balls, press a small cube of cheese in the middle, dip it in egg then flour and deep fry it for a delicious appetizer or starchy side dish. A little bit of leftover soup can be served in a tiny terrine as an appetizer. Leftover cheese and turkey can become a mini grilled Panini sandwich appetizer. Use your imagination. The list is endless!

Beat all together the butter and sugar in a separate bowl until you achieve a light and fluffy mixture. Add in the eggs one at a time and add in the vanilla and red cocoa paste. While beating the ingredients, add in the flour mixture then beat in half of the butter. Add in the flour mixture and beat it until well combined.

In a separate bowl, add in the mix vinegar along with the baking soda. After beating, add in the vinegar mixture into the cake batter and combine until you achieve a smooth texture. Now, you are ready to fill in the cupcake cups. Slowly fill in the cupcake tins with cake batter until they are about � full. Place the cupcake tins in the preheated oven. Bake the red velvet cupcakes for roughly 15 to 20 minutes. Make sure you rotate the pans halfway through ensuring well done cupcakes. To check if the cupcakes are already done, you can pat the tops and if the cake springs back up you can now remove the cupcakes from the oven. Remember that if the cupcake sinks down, you have to cook well. Another way to check if the cupcakes are already done is by inserting a toothpick into the center of the cupcake.
