Johan was then scheduled to navigate across the Arctic Ocean to Ottawa, Canada, however, less than three months into his journey, the explorer was forced to change route towards Vancouver,Canada, due to the ice drift and harsh climate. Johan and his team were forced to compensate time by increasing their daily work/travel regiment to twelve hours a day. The summer temperatures rose to approximately 14 degrees Fahrenheit (-10 degrees Celsius), which has caused a lack of ice to the North of Greenland. Because of this, and with limited rations, the Pole2Pole team was advised to travel to Vancouver, Canada. During this time, Johan traveled to New York City, USA and attended a meeting with The Clinton Foundation regarding environmental awareness, as well as attended a conference with the UNICEF foundation. He then flew back to Vancouver, Canada to continue his expedition, cycling his way along the West Coast.

It's time for the party and you need to put your appetizers together. It doesn't matter if you're hosting a large family reunion, a friendly holiday party, or a special bridal shower, you don't want to spend the entire time in the kitchen. You want appetizers that are yummy, crowd-pleasing, and easy to make ahead of time so you can be with your guests and enjoying the fun. Why not look to a food that everyone loves-potatoes-to make some enjoyable appetizers to tickle the taste buds and get the party going.

Here are 4 tasty appetizers you can make with potatoes:

1. Chunky potato wedges are a great way to utilize potatoes. The skins bake up crisp and delicious and the potatoes can be flavored with different salts, seasonings and spices. Cut up baking, russet or Yukon gold potatoes long ways into wedges. Toss in extra virgin olive oil and add your favorite flavorings. Seasoned salt, pepper, or kosher salt are good, but you can also add chopped rosemary, paprika, parmesan cheese, or even curry powder. Pick and choose which will go over well at your party. You can make a large batch ahead of time and keep them set on a low warming heat in the oven until it's time to serve them at the party.

2. Potato skins are a hit in restaurants, so why not serve them at your party. Again, this is a bake ahead item you can keep warm and serve hot to your guests. The best way is to bake several potatoes until they're soft on the inside and crisp on the outside. After they cool down, slice in half and scoop out the potato pulp, placing it in a bowl on the side. Cut the two halves of the potato into to more halves. Add salt and pepper and place on a baking sheet. Take the potato pulp that's in the bowl and add butter, sour cream, salt and pepper. Mix together well like you're making mashed potatoes. Then, layer a spoonful of the mixture on top of the potato shell. Add shredded cheese, bacon bits, and sliced scallions. Bake until golden brown and the cheese it melted. Serve with a dollop of sour cream on top. If you're keeping these warm in the oven before your guests arrive, it's best to save putting the cheese on until last. Then your guests can enjoy a warm, gooey, delicious appetizer.

3. Potato balls are delicious and easy to make. Peel and chop a pound of potatoes. Place in a pot of water and boil until soft, about 20 minutes. After draining, mash the potatoes with two tablespoons of olive oil, salt and pepper. Preheat oven to 375 degrees and spray a cooking sheet with cooking spray. Spoon potatoes into your hand and form a one inch ball. Mix a half teaspoon of paprika with a half cup of wheat germ. Roll the potato ball in this mixture and place on baking sheet. Repeat until all of the potatoes are rolled and on the sheet. Spray the balls with the cooking spray and then place in oven to bake for 20-25 minutes. When finished, remove to paper towels and then place on a serving platter with toothpicks for your guests to enjoy.

4. Spicy potato chips. This is certain to be a crowd pleaser and very easy to make. Purchase your favorite bag of brand name potato chips. Preheat oven to 350 degrees. Place potato chips in a large bowl and add two tablespoons of your favorite seasoning like Cajun spice or Old Bay. Spray everything generously with a vegetable oil or olive oil cooking spray. Get your hands into the game by mixing the chips and spices together, careful that every chip gets seasoned and has spray on it. Spread potato chips out onto a baking sheet in one layer. This may take a couple of batches. Bake in the oven for 12 minutes and then serve. This is a great way to kick up your favorite store bought chips into a delicacy that will make your friend think you made it all yourself.

What is your handbag personality?

Do you need a purse with lots of nooks and crannies? Or do you need pockets to organize so you know where your keys go, where your cell phone is, where your lipstick belongs; and can grab whatever is needed at a moment's notice? Are you so organized that you have those little organizers within a purse - one that can be transferred from one purse to the next every time you change your mind on what outfit to where? Or are all the contents of your handbag piled into one compartment, and you need to dump the whole bag out in order to find anything?

I like to keep a small organizer bag filled with the essentials that I need for any handbag; comb, lipstick & lip gloss, eye drops, one extra credit card, a little cash, a few business cards, a pen and a notebook. Even a couple of toothpicks, a cough drop or two are handy to have on hand. This way, I just need to grab my driver's license from my current purse, and throw everything into a smaller purse (to match my outfit) for an evening out. It is never a good idea to have your handbag with all your cash, all your credit cards etc. when hitting a club or public place where your handbag could be grabbed and stolen. Three Bean Chili


Serves 6

2 tablespoons of olive oil
1 yellow onion, chopped
1 package taco seasoning
2 15 oz. cans dark red kidney beans, drained
2 15 oz. cans black beans, drained
2 15 oz. cans white beans, drained
2 14 oz. canned diced tomatoes with green chiles, undrained
1 cup of water

For added protein and flavor, add ground beef or ground turkey right after you saute' the onions. Cook for about 5 to 6 minutes until cooked through, then add remaining ingredients and finish cooking as directed.

In heavy saucepan over medium heat, add olive oil and saute' onion until tender, about 4 to 5 minutes. Sprinkle taco seasoning mix over onions, cook and stir for 1 minute. Add drained beans, tomatoes, and water, Bring to simmer, cook for 10 to 12 minutes, until thickened and blended.

When A Friend Disappoints And Has An Affair

Our lives seem to have seasons. For a time being my husband and I were in a season of graduations, then marriages, then kids, and now we are in a season of divorces. I used to laugh at the fifty percent of all marriages end in divorce statistic smugly thinking that my friends would not be in that category, but now reality has set into my life. Fifty percent of marriages ending in divorce is a conservative number among my friends.

Most of the stories are similar in that they began with an emotional affair on the part of one spouse and then ended with a physical affair. In some cases the affairs did not last but in many of the cases both parties divorce and then remarry. As a friend to both spouses and unfortunately sometimes even a friend to the "other one", the boundaries of friendship seem to become strained no matter how much like Switzerland I attempt to become. Having learned from many past mistakes, here are a few suggestions as to how to handle learning that your friend has committed adultery.

Don't rely on gossip. This is not a time to listen to information second or third hand and rely on it as if it was gospel no matter how reliable the source. Instead observe your friend for yourself, looking for any indication that the gossip was true before you say anything. This simple step can reduce the effectiveness of gossip especially if it is not true. It there are indications that your friend is having an affair, then do not discuss it with anyone until you have had an opportunity to speak with your friend first.

Consider your friendship. Many friends run the other way instead of confronting a friend who is cheating because they don't want to get involved. If you are really their friend, you are already involved and divorce does not just affect the person getting the divorce, it affects everyone around them. In some cases an affair and then divorce can have a ripple effect on the work environment, a group of close friends or the church. Consider these questions. How much do you really value the friendship? Is this a friendship you would like to maintain no matter the outcome? If so, then you may need to confront them. If not, then walk away and don't spread gossip.

Think and pray before confronting. Ask God to give you the right time and place for a confrontation. Ask for understanding from their perspective what happened, not from your perspective. Recognizing that there usually is far more to the story than what you can see right now and usually more than one version of the same story goes a long way to understanding your friend. The point of confrontation is for reconciliation of your friendship, not an opportunity to say, "I'm right, you are wrong". Most likely, this is the time when your friend really needs a true friend.

Gently confront. True friendship is not based on performance; it is based on love for one another. Everyone makes mistakes, some are larger than others, some are more obvious than others, and some are more destructive than others, but nonetheless, we all make mistakes. By reminding yourself of times when you have made a mistake and needed a friend helps to keep the conversation in proper perspective. Most important to remember is to speak the truth in love to your friend. Do not mince words or fail to say what is right, just do it remembering that you too have been wrong in the past and will be wrong sometime in the future.

Being disappointed by a friend's affair does not mean that you have to lose the relationship. Rather, this is an opportunity to strengthen your relationship if your friend wants your friendship going forward. Your friend may not be thrilled by the conversation and in the end, your relationship may end but at least you will know that you did what was right, no matter how difficult.
